  • 500 Gr Deep-fried Meat
  • ½ Tsp Baking Powder
  • ½ Tsp Salt
  • ½ Tsp Mushroom Stock / Flavoring
  • 1 Tsp Granulated Sugar
  • 2 Tbsp Water
  • 1 Tbsp Egg White
  • 1 Tsp Cornstarch
  • ½ Tbsp Soy Sauce

Ingredients For Topside Meat Marinade:

  • 500 Gr Topside Meat
  • 1 Tsp Baking Powder
  • ½ Tsp Salt
  • ½ Tsp Mushroom Stock
  • 1 Tsp Granulated Sugar
  • 4 Tbsp Water
  • 1 Tbsp Egg White
  • 1 Tsp Cornstarch
  • ½ Tbsp Soy Sauce

Complementary Ingredients:

  • 300 Gr Baby Potatoes
  • Enough Salt To Boil The Potatoes
  • 4 Rosemary Leaves
  • 5 Cloves Of Garlic
  • 1 Tbsp Unsalted Butter
  • 200 Gr Spinach, Boiled
  • 3 Tbsp Water
  • 1 Tsp Salt
  • 1 Tsp Granulated Sugar
  • ¼ Tsp Black Pepper

Mushroom Sauce Ingredients:

  • 2 Tbsp Oil
  • 1 Onion
  • 2 Tbsp Unsalted Butter
  • 1 Tbsp Medium Protein Wheat Flour
  • 7 Cloves Of Garlic
  • 100 Gr Swiss Brown Mushrooms
  • 3 Thyme Leaves
  • 100 Ml Of Water
  • 150-200 Ml Cooking Cream / Evaporated
  • ¾ Tsp Salt
  • ¾ Tsp Powdered Chicken Stock
  • 1/8 Tsp Black Pepper
  • ½ Tbsp Worcestershire Sauce

Steps:

1. Cut the meat thinly, cutting off the fibers

2. In a bowl, mix baking powder, salt, granulated sugar, mushroom broth and water, mix well then add the meat, stir until the water seeps into the meat

3. Add egg whites, cornstarch and soy sauce, stir well. Leave it for 90 minutes

4. Boil water, boil potatoes with salt for 8-10 minutes, drain

5. Slice the garlic, and cut the potatoes in half. Heat oil, add potatoes, cook for a second

6. Add the garlic and rosemary leaves, saute until fragrant and brown then add the spinach, water, salt, sugar, black pepper and butter, cook for a moment. Set aside

7. Chop the onion then saute until fragrant over high heat. Reduce the heat, saute the onions until brown

10. Add butter and flour, stir well then add water, tyhme leaves, cooking cream, salt, chicken stock powder and Worcestershire sauce, cook for a moment

11. Brush the meat with a little oil and a little black pepper then grill until cooked on both sides. Set aside and let rest 5 minutes before cutting

12. Arrange the accompaniments, meat and drizzle with mushroom sauce on top
